Walnut and Mushroom Meatloaf

Ingredients
  • 500 grams beef mince
  • 1½ cups finely chopped mushrooms
  • 1 egg
  • 1 cup fresh breadcrumbs
  • ¾ cup finely chopped walnuts
  • ½ cup grated carrot
  • ¼ cup finely chopped onion
  • 2 tablespoons soy sauce
  • 2 teaspoons chopped fresh thyme
  • ¼ teaspoon ground black pepper
  • ½ cup fruit chutney
Instructions
  1. Preheat oven to 200°C.
  2. In a large bowl, combine all ingredients except chutney. Mix well until mixture holds together.
  3. Shape into a loaf and place in a greased loaf tin.
  4. Bake uncovered for 30 minutes. Pour chutney on top and continue baking 10-15 minutes longer or until cooked. Let stand 5 minutes before slicing.
