Tomato Sauce

Ingredients
  • 1 rasher bacon
  • 1 onion
  • 500g ripe tomatoes
  • 1 tablespoon butter
  • 1 bayleaf
  • 300 ml water
  • 1 beef stock cube
  • ¼ teaspoon nutmeg
  • 1 teaspoon sugar
  • salt and pepper
  • 2 teaspoons cornflour
Instructions
  1. Trim rind from bacon and cut into small pieces.
  2. Peel and slice onion. Chop tomatoes.
  3. Melt butter in a pan.
  4. Fry bacon for 2 minutes.
  5. Add onion, tomatoes and bay leaf. Cover and cook gently for 5 minutes.
  6. Add water, crumbled stock cube, nutmeg and sugar.
  7. Season with salt and pepper
  8. Bring to the boil, cover and simmer gently for 20 minutes until soft. Remove bay leaf.
  9. I'ass mixture through a sieve or put in an electric blender until smooth.
  10. Return mixture to pan and thicken with cornflour blended with a little water.
