Tomato Casserole

  • 3 tablespoons butter
  • pinch pepper
  • 2½ cups fresh breadcrumbs
  • 30 g cheese
  • 1 teaspoon basil
  • 700 grams firm tomatoes
  • A teaspoon salt
  1. Melt butter in a large frying pan.
  2. Add breadcrumbs, basil, salt and pepper.
  3. Stir over heat until breadcrumbs are crisp and golden brown.
  4. Remove from heat. Add grated cheese and mix well.
  5. Thickly slice the tomatoes.
  6. Place one layer of tomatoes in a greased ovenproof dish.
  7. Sprinkle tomatoes with salt and pepper. Cover with half the breadcrumbs.
  8. Repeat the layers, finishing with a layer of breadcrumbs on top.
  9. Bake, uncovered, in a moderate oven for 25 minutes.
