- Melt butter in a large frying pan.
- Add breadcrumbs, basil, salt and pepper.
- Stir over heat until breadcrumbs are crisp and golden brown.
- Remove from heat. Add grated cheese and mix well.
- Thickly slice the tomatoes.
- Place one layer of tomatoes in a greased ovenproof dish.
- Sprinkle tomatoes with salt and pepper. Cover with half the breadcrumbs.
- Repeat the layers, finishing with a layer of breadcrumbs on top.
- Bake, uncovered, in a moderate oven for 25 minutes.
