Prune and Apple Stuffing
Ingredients
  • 125 g prunes
  • 2 cooking apples
  • 2 tablespoons butter
  • 1 egg
  • 2 cups fresh breadcrumbs
  • juice of ½ lemon
  • ¼ teaspoon salt
  • pinch pepper
Instructions
  1. Soak prunes overnight. Drain, remove stones and chop roughly.
  2. Peel, core and grate apples.
  3. Melt butter in a small saucepan.
  4. Lightly beat egg.
  5. Combine all ingredients in a small bowl,
  6. Great for lamb, poultry or pork.
