Potato Hash with Baked Eggs

  • 1 Onion, sliced thinly
  • 2 tablespoons butter
  • 3 large potatoes and / or sweet potatoes, cubed
  • 1 tablespoon oil
  • 1 heaped teaspoon paprika
  • Salt and pepper
  • 1 teaspoon thyme
  • 4 eggs
  1. Preheat the oven to 200 Celsius. Mix the potato with oil, paprika, thyme and seasonings. Spread on an oven tray and bake until cooked.
  2. Melt the butter in a frypan and cook the onion on low heat for 30 minutes or until browned.
  3. Mix the onion and potato together.
  4. Place in an oven proof dish and crack the eggs on top. Cook until the eggs are to your preference.
