Potato Casserole

  • 6 medium potatoes
  • 2 onions
  • 250 g cheese
  • ½ teaspoon salt
  • ½ teaspoon cayenne pepper
  • ½ teaspoon mixed herbs
  1. Wash and peel potatoes and cut into thin slices.
  2. Peel onion and chop finely. Grate cheese.
  3. Place a layer of potato slices in the bottom of a greased ovenproof dish.
  4. Sprinkle with a little of the salt, cayenne, onion, herbs and cheese.
  5. Repeat layering until all ingredients are used, finishing with cheese.
  6. Bake in a moderate oven for 1 hour or until potatoes are cooked.
