- Wash and peel potatoes and cut into thin slices.
- Peel onion and chop finely. Grate cheese.
- Place a layer of potato slices in the bottom of a greased ovenproof dish.
- Sprinkle with a little of the salt, cayenne, onion, herbs and cheese.
- Repeat layering until all ingredients are used, finishing with cheese.
- Bake in a moderate oven for 1 hour or until potatoes are cooked.
