Peanut Butter Choc Chip Cookies

Ingredients
  • 100 grams butter
  • ⅓ cup brown sugar
  • ⅓ cups caster sugar
  • 2 tablespoons crunchy peanut butter
  • 1 egg
  • 1 teaspoon vanilla essence
  • 2 cups gluten free plain flour (or just plain if not LF / GF)
  • 3 tsp baking powder
  • 1 cup dark chocolate chips
Instructions
  1. Preheat the oven to 160°C.
  2. Melt butter in a pan or in the microwave and set aside to cool slightly.
  3. Pour butter into a large bowl and stir in the sugars until smooth and mostly dissolved.
  4. Mix in the peanut butter.
  5. Lightly beat the egg and stir into the sugar mixture with the vanilla essence.
  6. Mix flour and baking powder together into a small bowl and then gradually mix into sugar mixture until combined.
  7. Stir through choc chips.
  8. Make golf balls of the cookie mixture and place onto lined baking trays.
  9. Bake for 15 minutes or until golden then remove from oven and allow to cool on trays for 3 minutes before transferring to a wire rack to cool completely.
