- Remove excess fat from meat. Roll meat in flour.
- Peel onions and carrots. Slice thickly.
- Peel potatoes and cut into large squares.
- Place meat, potatoes, onions, salt, pepper, carrots, parsley and water in a large saucepan. Bring to the boil and skim.
- Cover with a tight fitting lid and simmer gently for 1½ hours.
- Add potatoes.
- Cook gently for a further 45 minutes or until well cooked. Thicken with extra flour blended with water.
- Serve hot with green vegetables.
