Irish Stew

  • 1 kg lamb neck chops
  • 2 tablespoons flour
  • 3 large onions
  • 2 carrots
  • 8 medium potatoes
  • salt, pepper
  • 1 tablespoon chopped parsley
  • 1½ cups water
  • 1 tablespoons flour, extra
  1. Remove excess fat from meat. Roll meat in flour.
  2. Peel onions and carrots. Slice thickly.
  3. Peel potatoes and cut into large squares.
  4. Place meat, potatoes, onions, salt, pepper, carrots, parsley and water in a large saucepan. Bring to the boil and skim.
  5. Cover with a tight fitting lid and simmer gently for 1½ hours.
  6. Add potatoes.
  7. Cook gently for a further 45 minutes or until well cooked. Thicken with extra flour blended with water.
  8. Serve hot with green vegetables.
