Glazed Carrots and Onions

  • 500 g carrots
  • 2 teaspoons cornflour
  • 3 small onions
  • 3 tablespoons water
  • salt, pepper
  • 4 tablespoons butter
  • 1 tablespoon brown sugar
  • 1½ tablespoons lemon juice
  1. Peel carrots and cut diagonally into 1 cm slices.
  2. Peel and slice onions.
  3. Combine carrots, onions, salt and pepper in a saucepan.
  4. Cover with boiling water and cook for 10 minutes.
  5. Drain well and keep hot.
  6. Blend brown sugar, cornflour, 3 tablespoons water, butter and lemon juice in a saucepan.
  7. Stir over low heat until mixture boils and thickens.
  8. Pour over carrots and onions. Toss lightly to combine.
