A simple omelette recipe with some variations.
- Break eggs into a bowl. Add salt and pepper.
- Beat eggs lightly.
- Melt butler in a small frying pan.
- As butter loams, pour in eggs. Do not allow butter to brown before adding omelette mixture.
- As omelette begins to set lift edges to cause unset eggs to run on to bottom of pan.
- Fold omelette in half and serve on a warm plate.
- Serve at once, garnished with parsley.
