Can anyone help me with a recipe for Scottish oatcakes made with ingredients that are available in our shops. My D.H. is sick of trying my failures.

I guess you have tried this one: frombest recipes scottish oatcakes?
They remind me of a recipe I used for a 40, 40, 20 body building diet.. 40% protein, 40% carbs, 20% fats
They are oatmeal pancakes. I need to check where I found it so I can attribute it. I don't mind these but they can be a bit rubbery as they cool.

1 cup fat free milk (or water)
3/4 cup oatmeal
3/4 cup oat flour (i grind up rolled oats in the food processer)
1 tsp baking powder (optional)
1/4 tsp salt (optional)
4 large white egg whites
1 tsp cinnamon, ground

PREPARATION:
Heat milk (or water) until hot, stir in oats and set aside. Beat egg whites into a stiff foam with hand mixer or blender and reserve. Mix remaining dry ingredients together and stir in oatmeal/milk mixture.

Fold in egg whites until mixture is well blended. Spray pan with nonstick spray and cook pancakes until browned on both sides.
