I love sweet potato in with the mashed spud to give it some colour, or just mashed on its own. Its great in with the roast veges, in casseroles etc. Nice in apricot chicken too and will make it go further (great when you are on a tight budget)! And it is even great in desserts! You can make a pie like pumpkin pie with it, yummy.
And sundried tomatoes are just heavenly! I often throw them in my lunch pasta which is usually just cooked spaghetti with chopped garlic, basil, a little butter, sundrieds and cheese tossed through. Mmmm I am getting hungry.
