Marinate

Postby AJH on Mon Aug 13, 2007 10:36 pm

I would like to get some new marinate ideas. I love making chicken and shrimp dishes but am tired of the same old thing. I usually am just using an Italian blend to marinate. I would like some suggesstions for something different that has worked for you. I am willing to try just about anything new!

Honey and soy sauce is one of my favourites. Sometimes I mix up barbeque sauce and worcestershire sauce for a marinade.

Alfredo sause is actually one of my favorite marinates out there. A red wine or a good beer also is great to marinate with chicken. So much you cna do it's not even funny. Just find something that tastes good and make it happen.

This is definitly different to an Italian type marinade - Citrus Chicken Drumsticks. Note that the rind is important.
Ingredients:
8 chicken drumsticks 85mL orange juice
85mL lemon juice 1 tsp orange rind, grated
1 tsp lemon rind, grated 5mL sesame oil
20mL olive oil 1 spring onion, finely chopped
Instructions:
1. Wash drumsticks and pat dry with paper towels. Trim
any excess fat and score thickest part of chicken with a
knife. Place in a shallow non-metal dish.
2. Combine juices, rinds, oils and spring onion in jug,
pour over chicken. Store, covered in the
refrigerator several hours or overnight, turning
occasionally. Drain chicken, reserve marinade. Prepare
and heat barbecue 1 hour before cooking.
3. Cook drumsticks on hot lightly oiled barbecue grill or
flatplate 15-20 minutes or until tender.
Brush occasionally with the reserved marinade. Serve
immediately.
