Hi Sueshep, I think the five year old might need a little help with this one if you use it.
Damper is a bread eaten by settlers of the outback (maybe they had it with a kangaroo stew). These pioneers lived in an extremely inhospitable environment, thousands of miles from civilisation (supplies, medicine etc).
Ingredients:
2.5 cup self-raising flour
1 tsp salt
1 tsp butter
1 tsp sugar
250mL milk
Instructions:
1. Preheat oven to 175C (can be cooked on a fire).
2. Mix together the dry ingredients and the butter.
Add the liquid and mix well. Knead for about 5 minutes.
3. Shape into a flattened ball and place on a greased
and floured baking sheet or in a greased and floured
round cake tin. Bake for 30 minutes. Use a Dutch oven if
you are cooking in an open fire.
4. Serve in moderately thick slices while still fairly
hot. Very Yummy.
Comments:
Half a cup of powdered milk with one cup of water can be
used in place of 250mL milk. Golden syrup (or treacle)
is the traditional thing to spread on damper.
