What a dilemma lol! I have some too at the moment and have been making a super fast kind of guacamole for snacking... avocado, bit of bottled pasta sauce and some tabasco.

However you already do guacamole so I found some other interesting ideas for you :)

http://au.blogs.yahoo.com/better-homes- ... o-recipes/ I think I would like that pumpkin and avo salad there at the bottom

http://www.marinobros.com.au/avocado-recipes.htm An omelette hmm

http://www.abc.net.au/queensland/stories/s1256642.htm Potato and avo salad

http://whatscookingamerica.net/Fruit/AvocadoPie.htm << dessert! Might try that one

Apparently you can also marinate and bbq them, batter and deep fry them and use them in smoothies.
So have fun!

Have you ever heard of giving them away? Haha, kidding but yeah you can make some great gift baskets for friends and they will love it.

I would just eat more than I normally would have in the first place.
