Banana and Cranberry Bread

  • 2 cups plain flour
  • 3½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ⅓ cup dried cranberries
  • ⅔ cup brown sugar
  • 2 overripe bananas, mashed
  • 2 eggs, lightly whisked
  • ½ cup milk
  • 50g butter, melted, plus some for greasing the tin
  1. Preheat oven to 180°C. Lightly oil a 11 x 21cm loaf pan with butter. Line the base sides with
  2. baking paper.
  3. Sift the flour, baking powder and cinnamon into a large bowl. Stir in the sugar and cranberries and make a well in the centre.
  4. Mash bananas in a medium bowl.
  5. Add the eggs, milk, and melted butter, and stir until well combined.
  6. Add the banana mixture to the flour mixture and stir until just combined.
  7. Spoon the mixture into the prepared pan and smooth the surface.
  8. Bake in preheated oven for 45-50 minutes or until a skewer inserted into the centre comes out clean. Remove from oven and set aside in the pan for 5 minutes. Turn onto a wire rack to cool.
