Rock Cakes

Ingredients
  • 1¾ cups self-raising flour
  • pinch salt
  • 6 tablespoons butter
  • ⅓ cup sugar
  • 1 teaspoon grated lemon rind
  • 2 teaspoons peel
  • ½ cup sultanas
  • 1 egg
  • 2 tablespoons milk
Instructions
  1. Sift flour and salt into a bowl.
  2. Rub butter into flour with fingertips until mixture resembles fine breadcrumbs.
  3. Add sugar and fruit. Mix well.
  4. Beat egg and milk together.
  5. Stir into the dry ingredients and mix well.
  6. Place teaspoonfuls of mixture on greased oven trays. Allow room for spreading.
  7. Bake in a moderate oven for 10 to 15 minutes.
  8. Allow to cool on trays.
