Cherry Ripe Slice

  • 185 g plain sweet biscuits
  • ⅔ cup glace cherries
  • 250 g white vegetable shortening
  • 1 can condensed milk
  • 2⅔ cups coconut
  • 1 tablespoon cocoa
  1. Place biscuits, whole, in the bottom of a greased and aluminium foil-lined 18 cm x 28 cm lamington tin.
  2. Melt half the shortening in a saucepan.
  3. Stir in coconut, cherries and condensed milk.
  4. Spread over biscuits. Refrigerate until firm.
  5. Melt remaining shortening and stir in the sifted cocoa.
  6. When cool spread over cherry filling.
  7. Refrigerate until firm.
  8. Remove from tin. Cut into squares.
