Kentish Cake
 
Ingredients
  • 6 tablespoons butter
  • ¾ cup castor sugar
  • 2 eggs
  • ½ teaspoon vanilla
  • 2 cups self-raising flour
  • 2 tablespoons cocoa
  • pinch salt
  • 2 tablespoons coconut
  • 1 tablespoon sultanas
  • 1 tablespoon cherries
  • 1 tablespoon chopped nuts
  • ½ cup milk
Instructions
  1. Beat butter and sugar to a cream.
  2. Add lightly beaten eggs and vanilla. beat well
  3. Sift flour, cocoa and salt together. Mix in fruit, coconut and nuts.
  4. Fold in dry ingredients alternately with milk to form a soft dough.
  5. Spoon into a well greased and floured block cake tin.
  6. Bake in a moderate oven for 50 to 55 minutes or until a skewer insisted in the .middle comes out clean.
  7. Cool on a wire rack.
  8. When cold, ice with chocolate icing and decorate with chopped nuts and cherries.
