Sausage Rolls

Ingredients
Pastry:
  • 1 cup plain flour
  • 1 cup self-raising flour
  • ½ teaspoon salt
  • 6 tablespoons shortening (butter, marg or lard)
  • 80 ml cold water
Filling:
  • 500 g minced steak
  • ½ teaspoon salt
  • pinch pepper
  • 1 onion
  • ¼ teaspoon mixed herbs
  • 60 ml water
  • 2 tablespoons flour
  • 3 tablespoons water, extra
Instructions
Filling:
  1. Place mince, salt, pepper, finely chopped onion, herbs and water in a saucepan.
  2. Cook gently, stirring frequently until meat and onion are cooked.
  3. Blend flour with extra water and stir into meat mixture to thicken. Allow to cool.
Pastry:
  1. Sift flours and salt into a bowl.
  2. Rub in shortening with fingertips until mixture resembles fine breadcrumbs.
  3. Make a well in the centre and gradually add cold water, stirring with a knife to make a dry dough.
  4. Knead lightly on a floured board. Roll out thinly to a square.
  5. Place spoonfuls of meat mixture along edge of pastry.
  6. Turn edge of pastry over, then again so that filling is completely enclosed.
  7. Cut along edge of pastry with a sharp knife.
  8. I 1 Repeat with remaining filling and pastry.
  9. With back of knife, flatten rolls slightly at 1 cm intervals
  10. Brush rolls over with egg and milk. Cut rolls into 5 cm pieces.
  11. Place rolls on greased baking trays and bake in a moderate to hot oven for
  12. to 20 minutes or until golden brown.
