Cheese Spaghetti

Ingredients
  • 280 grams wholemeal spaghetti
  • 2 onions
  • 2 carrots
  • 60g mushrooms
  • 2 tablespoons butter
  • 2 tablespoons wholemeal flour
  • 1½ cups water
  • 185g cheese
  • 2 tomatoes
  • 2 tablespoons chopped paisley
  • salt, pepper
Instructions
  1. Cook spaghetti in boiling sailed water for 12 to 15 minutes or until tender
  2. Drain and rinse under hot, running water.
  3. Peel and finely chop onions, grate carrots and slice mushrooms.
  4. Heat butter in a pan and saute onions until tender.
  5. Add carrots and mushrooms. Cook gently for 5 minutes.
  6. Remove from the heat and stir in the flour.
  7. Return to the heat and cook for one minute.
  8. Remove from heat and gradually add water
  9. Return to the heat and stir until mixture boils and thickens.
  10. Add skinned and chopped tomatoes and parsley.
  11. Season with salt and pepper
  12. Stir in three quarters of the grated cheese and stir until melted.
  13. Add spaghetti and mix lightly to combine.
  14. Spoon into a well greased ovenproof dish and sprinkle with remaining cheese.
  15. Bake in a moderate oven for 20 to 25 minutes until well browned.
