Hot Potato Salad

Ingredients
  • 1 kg potatoes
  • 2 sticks celery
  • 1 onion
  • ½ red pepper
  • 2 rashers bacon
  • 1 teaspoon butter
  • 2 tablespoons chopped parsley
  • ½ teaspoon salt
  • pinch pepper
  • ¼ cup cream
  • ⅓ cup french dressing
  • 2 hard boiled eggs
  • 90 g cheese
Instructions
  1. Peel and dice potatoes. Cook in boiling salted water until tender. Drain well.
  2. Chop celery, peel and finely chop onion, and chop red pepper and bacon.
  3. Melt butter in a pan and gently fry celery, onion, red pepper and bacon until tender.
  4. Combine hot potatoes, bacon mixture and parsley in a bowl. Season with salt and pepper.
  5. Mix cream and dressing until smooth. Pour over potato mixture
  6. Mix lightly and spoon into a greased ovenproof dish.
  7. Chop eggs finely and sprinkle over potatoes.
  8. Grate cheese. Sprinkle over top of eggs.
  9. Bake in a moderate oven for 10 to 15 minutes or until cheese has melted and is golden brown.
  10. Garnish with parsley and serve with steak or chops.
