Ratatouille

Ingredients
  • 1 small eggplant
  • 1 red pepper
  • 1 green pepper
  • 2 zucchini
  • 1 large onion
  • ½ cup oil
  • 1 clove garlic
  • ½ teaspoon thyme
  • 500 g tomatoes
  • salt, pepper
Instructions
  1. Peel eggplant and cut into 2½ cm cubes.
  2. Remove seeds from peppers. Cut into 2½ cm cubes,
  3. Slice zucchini into rounds.
  4. Peel and chop onion.
  5. Heat 2 tablespoons oil in a large pan.
  6. Add onions, crushed garlic and thyme.
  7. Cook until onions are transparent. Remove from pan.
  8. Saute each of the vegetables separately in pan in remaining oil. Add to onion.
  9. Chop tomatoes roughly and add to the vegetables.
  10. Put all vegetables in a large pan. Season with salt and pepper.
  11. Bring to the boil, reduce heal and simmer, uncovered, for 10 to 15 minutes.
