Mango Chutney - Sweeter Version

This is a variation on our original mango chutney recipe. The dates add some extra sweetness.
  • 12 green mangoes
  • 3 cups sugar
  • 100 grams preserved ginger
  • 6 small chilies (4 de-seeded)
  • 1 tablespoons salt
  • 250 grams sultanas or raisins
  • Large handful of dates
  • 50 grams fresh garlic
  • 2 tablespoon green ginger
  • 700ml of red wine vinegar
  1. Boil the sugar with half of the vinegar to a syrup.
  2. Add the other ingredients, all chopped finely.
  3. Add the remaining vinegar slowly and boil until the chutney thickens to a nice consistency and colour. (About 2 hours)
  4. Pour into sterilised jars for storage.
