Chilli Sauce
 
Ingredients
  • 400 grams Tinned Tomatoes
  • 24 hot red chillies (or to your taste)
  • 175ml vinegar (red wine vinegar or even just brown)
  • 2 tsp Salt
  • 2 tsp ground Coriander
  • 2 large Brown Onions
  • 1tbsp Brown Sugar
  • 4 Cloves Garlic
Instructions
  1. Chop the onion and garlic and put in a pan with just enough vinegar to keep it wet.
  2. Cook over a medium to low heat for about 10 minutes, stirring now and then.
  3. When the onions are soft and caramelised add the remaining ingredients and keep on a soft boil for 1 hour with a lid on.
  4. Carefully blend the sauce. I use a stick blender in the pan.
  5. Cook for a little longer to get the desired thickness.
  6. Pour into sterilised bottles to store.
