Baked Eggs in Bacon Wrapped Tomatoes

A delicious and healthy breakfast consisting of eggs, bacon and tomatoes.
Ingredients
  • 2 eggs
  • 2 rashers of bacon
  • 2 medium - large tomatoes
  • oil or oil spray
  • dollops of mayonnaise or other creamy dressing
Instructions
  1. Preheat the oven at 200 Celsius
  2. Oil two cups of a muffin tin.
  3. Scoop the centres out of the tomatoes.
  4. Wrap bacon around each tomato with the rind to the top. Place in the muffin cups.
  5. Crack an egg into each tomato and put a dollop of dressing on each one.
  6. Place into the oven and cook until the whites are white and the yolk is setting. (About 20 minutes)
