  • 6 hard boiled eggs
  • 1½ tablespoons of egg mayonnaise
  • 2 tablespoons chopped chives (reserve a bit for sprinkling)
  • 1 teaspoon dijon mustard
  • Paprika (optional)
  1. Cut each egg in half longways.
  2. Scoop out the yolk.
  3. Mash the yolk with mayo and mustard until smooth.
  4. Mix in the chives.
  5. Using a piping bag fill each egg half and sprinkle with chives or paprika.
  6. You can also use curry powder instead of mustard and other herbs or finely chopped and fried bacon.
