- 6 hard boiled eggs
- 1½ tablespoons of egg mayonnaise
- 2 tablespoons chopped chives (reserve a bit for sprinkling)
- 1 teaspoon dijon mustard
- Paprika (optional)
- Cut each egg in half longways.
- Scoop out the yolk.
- Mash the yolk with mayo and mustard until smooth.
- Mix in the chives.
- Using a piping bag fill each egg half and sprinkle with chives or paprika.
- You can also use curry powder instead of mustard and other herbs or finely chopped and fried bacon.
