Custard Tart

  • 3 eggs
  • 1 teaspoon vanilla
  • 2 tablespoons sugar
  • 1 egg white
  • 2 cups milk
  • nutmeg
  1. Prepare biscuit pastry according to recipe.
  2. Line a 20 cm pie plate making sure there are no breaks in the pastry.
  3. Brush base and sides of pastry with lightly beaten egg white. This gives a light seal to the pastry and helps to stop the uncooked custard seeping through
  4. Make a decorative edge on pastry with the tip of a lightly floured teaspoon
  1. Beat eggs, vanilla and sugar together.
  2. Heat milk lo lukewarm and gradually stir into egg mixture.
  3. Put pie plate on to oven tray. Carefully spoon the custard mixture into the crust.
  4. Bake in a moderate oven for 50 to 55 minutes.
  5. After 15 minutes cooking time sprinkle with nutmeg.
  6. Do not overcook. Custard will firm as it cools.
