Crunchy Baked Potatoes

  • 6 medium potatoes
  • ½ teaspoon paprika
  • 125 g butter
  • 125 g cheese
  • ½ teaspoon salt
  • 2 tablespoons dry breadcrumbs
  1. Wash and peel potatoes.
  2. Slice at 3 mm intervals, three-quarters of the way through to the bottom, so that the potato opens up.
  3. Melt butter in a baking dish.
  4. Roll potatoes in butter to coat evenly.
  5. Place in ovenproof dish in single layer, cut side up.
  6. Sprinkle with salt and paprika.
  7. Bake in a moderate oven, basting often for 45 minutes.
  8. Combine grated cheese and breadcrumbs.
  9. Sprinkle over potatoes, bake 10 minutes longer or until lightly browned.
