Crunchy Baked Potatoes
- Wash and peel potatoes.
- Slice at 3 mm intervals, three-quarters of the way through to the bottom, so that the potato opens up.
- Melt butter in a baking dish.
- Roll potatoes in butter to coat evenly.
- Place in ovenproof dish in single layer, cut side up.
- Sprinkle with salt and paprika.
- Bake in a moderate oven, basting often for 45 minutes.
- Combine grated cheese and breadcrumbs.
- Sprinkle over potatoes, bake 10 minutes longer or until lightly browned.
