Recipe for Basil and Cashew Pesto:
Finely grind or process 1/2 cup cashews (I use unsalted roasted ones) with 1 cup grated parmesan cheese and 1/3 cup fresh basil.
Slowly add 1/3 cup olive oil, and a squeeze of lemon juice while processing it until well combined.

Toss through hot pasta and serve.
