Smoked Salmon Pate

125 grams smoked salmon
1/2 tsp french mustard
1 tbsn lemon juice
2 tsp oil
1/4 cup cream
30g butter
2 shallots
salt and pepper
Roughly chop the smoked salmon and place in a food processor with the butter, process until its smooth. Gradually add the combined lemon juice and oil. Then add the cream and mustard, blending until its combined. Season and fold in the shallots. Spoon into serving dishes and garnish.
