Recipe for Chicken Salad with Basil Vinaigrette :
Dressing ingredients
1/2 cup olive oil, 1/3 cup white wine vinegar, 2 tablespoons balsamic vinegar, 2 tablespoons fresh basil, 1 tablespoon minced garlic, cracked pepper to taste and 1 tablespoon seeded mustard.
To make the dressing whisk the above ingredients together well.
Make a salad with mixed salad leaves, slices of chargrilled chicken, toasted pinenuts, chopped tomatoes and sliced red onion.
Drizzle dressing on the salad.
