Coconut Biscuits

  • 6 tablespoons butter
  • 1 cup castor sugar
  • 1 egg
  • 2 cups self-raising flour
  • pinch salt
  • 1 cup coconut
  • extra sugar
  1. Beat butter and sugar to a cream.
  2. Add lightly beaten egg. Beat well.
  3. Sift flour and salt together. Mix in coconut.
  4. Add dry ingredients to creamed mixture. Mix well.
  5. Lightly flour hands.
  6. Take teaspoonfuls of mixture, roll into balls and press flat between hands
  7. Dip the top side in extra sugar.
  8. Place on greased baking tray, allowing room for spreading.
  9. Bake in a moderate oven for 10 to 15 minutes.
  10. Allow to cool on tray.
