- Beat butter and sugar to a cream.
- Add lightly beaten egg. Beat well.
- Sift flour and salt together. Mix in coconut.
- Add dry ingredients to creamed mixture. Mix well.
- Lightly flour hands.
- Take teaspoonfuls of mixture, roll into balls and press flat between hands
- Dip the top side in extra sugar.
- Place on greased baking tray, allowing room for spreading.
- Bake in a moderate oven for 10 to 15 minutes.
- Allow to cool on tray.
