Cinnamon Teacake

  • 2 eggs, separated
  • ¼ teaspoon salt
  • 1 cup sugar
  • 1 cup milk
  • 2 cups self-raising flour
  • 2 tablespoons melted butter
  • 1 tablespoon sugar, extra
  • 1 teaspoon cinnamon
  1. Beat egg whites with salt until soft peaks form.
  2. Gradually add sugar. Beat well.
  3. Beat in egg yolks and milk.
  4. Sift flour and fold in alternately with melted butter. Mix well.
  5. Pour into a well greased and lined 20 cm cake tin.
  6. Sprinkle with combined extra sugar and cinnamon.
  7. Bake in a moderate oven for 50 to 60 minutes.
  1. Apple Teacake: Pee! and core 1 cooking apple. Slice thinly. Arrange slices on top of cake mixture and sprinkle with cinnamon and sugar.
  2. Peach Teacake: Drain 1 can sliced peaches and arrange slices over top of cake mixture. Sprinkle with 1 tablespoon brown sugar and 1 teaspoon cinnamon.
