Cheese Souffle Omelette

  1. Separate whites from yolks of eggs.
  2. Whisk egg whites until stiff but not dry.
  3. Beat egg yolks until creamy.
  4. Lightly fold egg yolks into whites. Season with salt and pepper.
  5. Heat butter in a small frying pan.
  6. Pour in eggs and cook gently for 3 minutes.
  7. Sprinkle grated cheese on top and place under hot griller for 1 minute.
  8. Fold in half and serve immediately on a warm plate.
