Saving a Failed Mozzarella

Saving a Failed Mozzarella

Yesterday I had my first go at mozzarella using this recipe. Unfortunately the curds wouldn’t set. I believe it’s due to using tap water which is chlorinated and this stops the rennet from working. If there is anything I cannot abide it is waste!  So what did I do?   Well I tried to scoop as much curd as I could out without too much whey but it was very small dots of curd. With this I tried to continue the heating and...

Cooking with Kids

My niece and nephew came over again yesterday so we did some more cooking. We made some fantastic choc chip cookies. These were a great choice as there is plenty for them to do easily. They did the measuring, mixing and rolled balls of cookie dough. Of course the cookies weren’t all uniform in size but that doesn’t matter. Seeing the excitement on their faces as they watched them spread, crack and brown was fantastic. And...

Cooking With Kids – Spaghetti

I looked after my niece and nephew yesterday morning and wanted to cook something with them. I hadn’t decided what that would be until I found that Mum would be back to pick them up at lunch. I asked them if they would like to make spaghetti. Not the packet stuff in some water but real spaghetti noodles. They got excited about that. I mixed up an egg pasta dough, which is simply one egg to 100 grams of flour. The dough needs to...

I mixed up an eggy pancake batter of 1/2 cup sr flour, 1/2 cup milk and one egg then mixed in the leftover mornay and penne pasta. Fry up the pancakes and serve with chili sauce: voila!

Balsamic Lamb with Chili

Just made this balsamic marinated lamb recipe with some chilli added. I ground up dried chilli flakes with some salt and the garlic, then added it to the vinegar. The rest of the recipe was the same. I served it with mashed potatoes that had butter, spring onions, thyme and milk in the mash. And then steamed snow peas, zucchini and silverbeet with...
