- Preheat the oven at 200 Celsius
- Oil two cups of a muffin tin.
- Scoop the centres out of the tomatoes.
- Wrap bacon around each tomato with the rind to the top. Place in the muffin cups.
- Crack an egg into each tomato and put a dollop of dressing on each one.
- Place into the oven and cook until the whites are white and the yolk is setting. (About 20 minutes)
