Homemade pasta is delicious and not as hard as it seems. The basic recipe is one large egg to 100 grams of flour. This produces enough pasta to fill two very hungry tummies.
We had tuna mornay with penne last night for dinner and I saved the leftovers (much to Mr Poodle’s disgust). This morning we are having pancakes. I mixed up an eggy pancake batter of 1/2 cup sr flour, 1/2 cup milk and one egg then mixed in the leftover mornay and penne pasta. Fry up the pancakes and serve with chili sauce: voila!
I am a self confessed lover of leftovers! I hate waste, especially with food. Our poor dog, Teddy, hates that I love leftovers. But he still manages to get plenty of scraps.
