Apricot and Almond Cookies

Ingredients
  • 100 grams butter
  • ½ cup brown sugar
  • ½ cups caster sugar
  • 1 egg
  • a few drops of pure almond essence
  • 1½ cups plain flour
  • ½ cup almond meal
  • 3 tsp baking powder
  • 1 cup finely chopped dried apricots
Instructions
  1. Preheat the oven to 160°C.
  2. Melt butter in a pan or in the microwave and set aside to cool slightly.
  3. Pour butter into a large bowl and stir in the sugars until smooth and mostly dissolved.
  4. Lightly beat the egg and stir into the sugar mixture with the almond essence.
  5. Mix flour, meal and baking powder together into a small bowl and then gradually mix into sugar mixture until combined.
  6. Stir through apricot pieces.
  7. Make golf balls of the cookie mixture and place onto lined baking trays.
  8. Bake for 15 minutes or until golden then remove from oven and allow to cool on trays for 3 minutes before transfering to a wire rack to cool completely.
