- Beat butter and sugar to a cream.
- Add lightly beaten eggs and beat well.
- Sift flour, cinnamon and mixed spice together.
- Stir into creamed mixture.
- Spread half the mixture over base of a well greased 18 cm x 28 cm lamington tin.
- Spread evenly with apple.
- Spread remaining cake mixture evenly over apple.
- Bake in a moderate oven for 50 minutes.
- Allow to cool in tin. Sprinkle with icing sugar and cut into pieces.
