Apple Slice

  • 185 g butter
  • ¾ cup sugar
  • 2 eggs
  • 1½ cups plain flour
  • 1 teaspoon cinnamon
  • 1 teaspoon mixed spice
  • 1 large can pie apples
  • ¼ cup icing sugar
  1. Beat butter and sugar to a cream.
  2. Add lightly beaten eggs and beat well.
  3. Sift flour, cinnamon and mixed spice together.
  4. Stir into creamed mixture.
  5. Spread half the mixture over base of a well greased 18 cm x 28 cm lamington tin.
  6. Spread evenly with apple.
  7. Spread remaining cake mixture evenly over apple.
  8. Bake in a moderate oven for 50 minutes.
  9. Allow to cool in tin. Sprinkle with icing sugar and cut into pieces.
